  1. Rats. None of the cookbooks on my shelf, even the venerable Joy of Cooking, has recipes for dodo. And I suspect there’s enough genetic divergence from their pigeon relatives is enough to make squab recipes inappropriate.

    • While dodos were supposed to taste awful, (sailors ate a few, but most of the damage was done by introduced animals like rats) I suspect the most comparable animal there’s recipes for would be the Victoria’s crowned pigeon. It’s the largest extant species of pigeon, the size of a small chicken, a fruit-eater and pretty much exclusively ground-dwelling. People eating them is a major reason /they’re/ endangered though, so I don’t think the comparison would be ideal.
